SWEET POTATO BLACK BEAN BURGERS

Made a few changes to Isabel Eats‘s recipe to make it more simple & with cleaner ingredients! I usually make a large batch because they make great lunch leftovers!

Ingredients
quinoa (sprouted)
1.5 cups
sweet potatoes
2
black beans
1 can
salt & pepper
1/2 tsp
onion powder
1 tsp
garlic powder
1/2 tsp
cumin powder
2 tsp
chili powder
1 tsp
Instructions
  • Peel and chop sweet potatoes. Double boil them until soft (quickest way) or bake at 400 degrees until soft.

  • Cook quinoa (instructions usually on back of bag) I usually just throw into some boiling water. Then let it simmer and cover. I wait until all the water is gone. If there’s too much water I drain it using the lid.

  • Heat black beans on stovetop.

  • In a large bowl, add black beans & cooked sweet potatoes. Mash until consistency is only slightly chunky.

  • Add in cooked quinoa and spices. Mix together and form into 8 burger patties, about 1/3 cup of mixture each. Sometimes I add an egg to help the patties stick together better.

  • Place burger patties on a very greased baking sheet. Bake in 400 degree oven for 20 minutes. Flip over, spray other side with olive oil and bake for another 10 minutes.

  • Put it on some sprouted bread, add spinach, avocado & spicy mayo. Enjoy!
